Smoon's Chicken Recipe

Gaby sent me this great recipe, so I hope the rest of the world will benefit from it too:

4-6 chiken breast without bones, it's much more easy :P
1/2 bottle of mole (see image)
2 pieces of chocolate Ibarra( see image)
Sugar if it's necesary
2 table spoons Salt

Boil the chiken with the salt until change it's color or until is Totally cooked.
Take the chiken and with two forks make strips.
After the chicken is cooked with the same water fill 1 cup and put in the pot you are going to cook and disolve the mole and the chocolate in it with the fire low. If the mole is too liquid you may add "maizena."

2 table spoon disolved in cold water then add it to the "mole" mixing very well if you don't mix some kind of tiny balls will appear. When you take out the spoon the consistency is thick, a thread between the spoon and the pot (like enamel consistency :P ) Taste it and if you want it more spice add more mole if you want it sweet you may add more chocolate or sugar, chocolate is better.

Then you can add the chicken and mixt well, add the ckicken water until it covers the chiken, if its too liquid you may add another 2 table spoons of Maizena (previusly disolved in cold water) let it boil a while, with low fire, 10 minutes aprox.

You combine this with rice, I always use 5 minutes rice :P as your wife usually cook the rice but without any vegetables and better if it's white, the rice can be cook with the water where you boiled the chicken takes a better flavor.

Serve together and eat it with tortillas and believe me it's a very delicious food
