Today is the due day for BamaTrav Culinary Smackdown.
One problem, I had a ton of ideas, but no time to get them done. And this morning after seeing Trav's own submission, I could've easily pulled something out this week. The other night I grilled up some serious bad-ass pork chops with homemade BBQ sauce. If i took a couple chili's and stuffed them with cheese I would've been in like Flynn.
But no.
I douched out. I wanted to make a more complex stuffed pepper. I'll discuss the recipe, so that all you in the cyberworld can give it a shot.
"Stuffed Grilled Pepper Marder"
Ingredients: - 2 Italian peppers (frying and jalapeno peppers are good too!) tops removed and hollowed.
- 1/4 pound ground beef
- 1 good sized onion chopped
- 1/2 cup rice (already cooked and ready to roll)
- cheese (shredded would be best)
- oil or butter
- seasonings per taste
Since Mrs. Bax0jayz doesn't like mt to show off in the kitchen I would do all this on the grill.
- Toss the ground beef and onions into a pan and toss on the grill. Check frequently, stirring, until the beef browns and onions begin to caramelize. Remove from flame.
- Mix in the rice and seasonings of choice.
- Mix in a liberal amount of cheese.
- Stuff ingredients into the peppers. Place into oiled or better piece of tin foil and wrap loosely.
- Throw on grill until the pepper softens.
Done! Serve hot. Garnish with extra cheese on top. I usually serve it with mixed vegies and / or a salad.

Damn shame you didn't have time to actually cook it though !
Tell me about it. I really wanted to do this the right way, but we're headed out on vacation this weekend and trying to get things done and unexpected guests ate up my entire week. Bummer.
